Quinoa Apple & Berry Crisp

⅔ cup water
⅓ cup quinoa
4 apples, cut into cubes
¼ cup chopped walnuts
2 tbsp brown sugar
1 tbsp lemon juice
1 tsp ground cinnamon
½ tsp ground allspice
1 cup berries (any sort; thawed if frozen)
scoop of ice cream (optional!)

  • Bring water & quinoa to a boil in medium saucepan. Cover, reduce to a simmer & cook for 10 min. Turn heat off & lead the covered saucepan on burner for another 15min. Fluff with a fork & allow quinoa to cool. Can also cook quinoa in rice-cooker.
  • Preheat oven to 375F. Spray a 9-inch square baking dish.
  • Mix all ingredients and place in oven for 35-40min, until apples are tender.
  • Serve with ice cream, if you want.
