Delicious Vegan Chili

Flavour improves with a couple days in the fridge – great to make ahead of time then reheat for gatherings/potlucks.

2 green peppers, chopped
3 onions, chopped
2 28 oz. cans tomatoes
1 19 oz. can chick peas (optional)
3 tsp. Paprika
pepper, chili/hot sauce to taste
1 red pepper, chopped
4 c. celery, chopped
2 28 oz. cans kidney beans (or mixed beans)
1 tsp. Salt
2 tsp. chili powder

Sauté peppers, onions and celery in a small amount of oil
Add remaining ingredients and simmer for one hour
Serve hot with pita bread or rolls or over rice
